1 large onion - diced
1 green bell pepper - diced
1 poblano - diced
6 cloves of garlic - sliced
1 24 oz jar/can of tomato sauce
1 12 oz beer (I recommend Shiner Bock)
1 6 oz can of tomato paste
4 15 oz cans of original Ranch Style Beans and the sauce
2 cups of beef stock
2 tbsp of chili powder
2 tsp cumin
2 tsp dried oregano
1 tbsp paprika
A few dashes of hot sauce (I recommend Crystal)
Kosher salt and black pepper to taste
Garnish (optional):
Original Fritos
1 onion - diced
Freshly shredded cheddar cheese (do the right thing - no pre-shredded cheese)
Lime wedges
Hot sauce
Sour cream
Sliced scallions
Cilantro - chopped
Avocado - sliced
Oyster crackers
Method
In a large saute pan, brown the ground beef 1 lb at a time
While the beef is browning, add the jalapenos, onion, green bell pepper, poblano, garlic, tomato sauce, and beer to a large crock pot set to high
Once the beef is browned, discard fat, and add to the beef to the crock pot
Add the tomato paste to the crock pot and stir to combine
Add the Ranch Style Beans and stir
Add beef stock to crock pot
Season the chili with chili powder, oregano, cumin, paprika, kosher salt and black pepper
Cook the chili on high for 3 hours or on low for 6-8 hours, stirring occasionally and seasoning as needed
Serve over Fritos and add whatever garnishes make you happy
