The World’s Best Chili

There are two types of people in this world. One who is searching for the best chili recipe and others who think they possess one. I believe I am part of the latter group and hope all of you chili recipe searchers have found what you are looking for.

This chili recipe leans more towards the mild side but you can always add more spice if desired.

I highly recommend making this chili recipe for your next party, game day, or just because you want chili.

 

Ingredients

  • 2ish lbs of 90/10 ground beef

  • 2 jalapenos - diced

  • 1 large onion - diced

  • 1 green bell pepper - diced

  • 1 poblano - diced

  • 6 cloves of garlic - sliced

  • 1 24 oz jar/can of tomato sauce

  • 1 12 oz beer (I recommend Shiner Bock)

  • 1 6 oz can of tomato paste

  • 4 15 oz cans of original Ranch Style Beans and the sauce

  • 2 cups of beef stock

  • 2 tbsp of chili powder

  • 2 tsp cumin

  • 2 tsp dried oregano

  • 1 tbsp paprika

  • A few dashes of hot sauce (I recommend Crystal)

  • Kosher salt and black pepper to taste

Garnish (optional):

  • Original Fritos

  • 1 onion - diced

  • Freshly shredded cheddar cheese (do the right thing - no pre-shredded cheese)

  • Lime wedges

  • Hot sauce

  • Sour cream

  • Sliced scallions

  • Cilantro - chopped

  • Avocado - sliced

  • Oyster crackers

Method

  1. In a large saute pan, brown the ground beef 1 lb at a time

  2. While the beef is browning, add the jalapenos, onion, green bell pepper, poblano, garlic, tomato sauce, and beer to a large crock pot set to high

  3. Once the beef is browned, discard fat, and add to the beef to the crock pot

  4. Add the tomato paste to the crock pot and stir to combine

  5. Add the Ranch Style Beans and stir

  6. Add beef stock to crock pot

  7. Season the chili with chili powder, oregano, cumin, paprika, kosher salt and black pepper

  8. Cook the chili on high for 3 hours or on low for 6-8 hours, stirring occasionally and seasoning as needed

  9. Serve over Fritos and add whatever garnishes make you happy
